Mint Chocolate Brownie Smoothie
I have a thing about chocolate chips. I think it’s a waste of sugar and caffeine to eat them cold. The flavor essentially vanishes! I like my chocolate too much to waste my daily dose on tasteless, hard cold brown chunks. So even though I love a good, rich mint chocolate chip smoothie, I don’t usually opt for the chips.
Enter the Mint Chocolate Brownie Smoothie. My latest obsession!
RECIPE (serves 2):
1/2 cup coconut milk full fat, canned
1/2 cup non-dairy yogurt (greek is ideal)
1/4 - 1/2 avocado (optional)
2 bananas chopped and frozen
4 cups spinach
6 ice cubes
20 grams plant-based protein powder
4 drops peppermint extract peppermint
1/4-1/2 cup water optional, if needed
* chocolate brownie pieces, pulsed into smoothie at the end
